The "Characters" count includes everything — letters, digits, punctuation, spaces and emoji. The "Characters (no spaces)" count leaves out spaces, tabs and line breaks, which is the number some assignments and forms ask for.
Words are sequences of characters separated by spaces or line breaks, the same way most word processors count them. Hyphenated words like "well-known" count as one word.
Sentences are split on ending punctuation (periods, question marks and exclamation marks), and paragraphs are blocks of text separated by at least one blank line.
